Last night Umbra held its first Pizza Workshop of the semester at pizzeria Pizza e Musica, a local favorite tucked away in the bohemian district that surrounds Via della Viola. Pizza is one of the world’s most popular foods and an icon of Italian culture.
The evening began with a brief history of pizza’s ingredients (none of which are native to or were invented in Italy) and their journeys from as far away as Peru and Egypt to Italy. Students heard about the legend behind the world-famous Margherita pizza (topped with tomatoes, buffalo mozzarella, and basil), as well as the rigorous training of the pizzaioli (pizza makers).
The group then heard from Genaro, their master pizzaiolo for the evening, about his preferred dough recipe (well, the ingredients, but not their quantities – some things a pizzaiolo never tells!) and how he works with the wood-fired oven. Genaro hails from Naples, the pizza capital of the world – be sure to try some if you plan to visit
Students then made their own pizzas under Genaro’s expert guidance, before sitting down together to enjoy the fruits of their labors.
