The centerpiece of the four-credit option, this overnight trip includes stops at four different production facilities. One is a family-run business (balsamic vinegar), the second two are cooperatives (parmesan cheese and prosciutto di Parma) and the fourth is Barilla, the pasta giant. Students will be able to better understand economies of scale but also the importance of what economists term “collective reputation.”
