I am junior at the University of Vermont majoring in Dietetics and minoring in Dance. I’m from Springfield, New Jersey, a suburb an hour from New York City. At the Umbra Institute, I was a part of the Food and Sustainability Studies program. In this program, I took three lecture and discussion based courses that included field trips and workshops related to the topics discussed in class. We visited a chocolate laboratory, a famous butchery in Tuscany, and a brewery in an old monastery. I loved living in Perugia and exploring the unique corners, shops, and views of the city.
